IT isn't easy getting the proper mix of textures for candles de bordeaux, which may be why the cylindrical pastries are rarely seen at area bakeries. An exception: Bob's Well Bread Bakery (bobswellbread.com) in Ballard and Los Alamos, where the caramelized beauties appear daily. C'est magnifique!
